Roasted Edamame

Ingredients
- 1 lb. frozen shelled edamame
- ½ tsp. salt
- ½ tsp. pepper
- 1½ tsp. olive oil
Instructions
- 1. Preheat oven to 400ºF. Lightly spray a baking sheet with cooking spray.
- 2. Run the edamame under water in a colander to thaw. Drain and pat dry.
- 3. Toss all ingredients together and spread evenly on the prepared baking sheet. Roast until crisp and golden (50-60 minutes).
