Ingredients
  

  • 4 each parsnips peeled and grated
  • 4 each turnips peeled and grated
  • 1 medium sweet potato peeled and grated
  • 1 tablespoon Olive oil
  • 1 dash salt
  • 2 sprays olive oil cooking spray

Instructions 

  • 1. Preheat oven to 400 degrees. Spray baking sheet with olive oil spray. Combine grated root vegetables, olive oil and salt in a bowl and mix well.
  • 2. Using a 1/2-cup measure, scoop up vegetables and arrange into little haystacks on baking sheet. Roast for 15 minutes and flip (using a spatula).
  • 3. Continue baking another 15 minutes or until crisp-tender.
