Ingredients
- 12 whole eggs
- ½ cup clarified butter
- 12 oz smoked salmon 12 slices of smoked salmon
- 1/2 cup sour cream
- 2 tbsp plus 2 tsp fresh dill chopped
- 4 sprigs Fresh dill weed sprigs
- 4 teaspoons caviar salmon caviar
Instructions
- With a wire whisk, beat the eggs in a stainless steel or glass bowl until foamy.
- Melt 2 tablespoons of the clarified butter in an omelet pan over moderate heat. Pour 1/4 of the eggs into the pan. As the eggs begin to set, roll pan from side to side, covering the bottom. When it is set on the bottom, flip the omelet over. Lay 3 slices of the smoked salmon, 1 tbsp of the sour cream, and 1 teaspoon of the chopped dill on top.
- When the omelet is set on the second side, roll or fold it in half. Remove it from the heat and place on a warmed plate. Slit the top of the omelet and spoon 1 tbsp more of the sour cream into the slit. Sprinkle caviar over the sour cream, and top with a large dill sprig.
- Repeat three times, with the remaining ingredients.
