Savory Almond-Buttermilk Biscuits

Ingredients
- 3 tbsp butter divided
- 1 whole onion finely chopped
- ¼ teaspoon Garlic clove minced
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1/3 cup vegetable shortening
- 1 cup buttermilk
- 1/2 cup toasted and coarsely chopped almonds
- 2 tbsp chopped fresh parsley
- 2 teaspoons dried sage
- 2 teaspoons Dried rosemary
- 2 teaspoons dried thyme
Instructions
- Preheat oven to 450° F. In a small skillet, melt 1 tbsp of the butter over medium heat and sauté the onion and garlic for 5 minutes, stirring occasionally. Remove from heat and cool completely.
- In a medium-sized bowl, mix together the flour, baking powder, salt, and baking soda. Cut in the shortening with a pastry blender. (Particles of the shortening should remain.) Stir in the buttermilk, almonds, parsley, and herbs to make a soft dough.
- Turn out the dough onto a lightly floured surface and knead just until the dough comes together. Pat or roll out the dough to 1/2-inch thickness and cut out the biscuits with a round biscuit cutter. Place on an ungreased baking sheet, 1 inch apart, and bake for 10 - 15 minutes or until golden brown.
- In a small saucepan, melt the remaining butter. Remove the biscuits from the oven and brush the tops with the butter. Serve hot or warm.
