Ingredients
  

  • 1 lb potatoes peeled, chopped, and cooked
  • 1/4 cup pureed roasted garlic
  • 1/2 cup dried bread crumbs
  • 1 tablespoon freshly squeezed lemon juice
  • 1 dash black pepper
  • 1/4 cup olive oil
  • 1/4 cup chopped scallions
  • 1/8 cup chopped pitted black olives
  • 1 pkg flat bread grilled

Instructions 

  • In a food processor, puree the potatoes. Add the garlic puree, bread crumbs, lemon juice, salt, and black pepper and process until combined. While processing, drizzle the oil into the potato mixture until well mixed.
  • Transfer the mixture to a medium-sized bowl and stir in the scallions and olives. Serve at room temperature with the flat bread. Makes 2 cups.
