Ingredients
- Fresh mint leaves rinsed
- 2-1/4 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp salt
- 11 tbsp cold butter
- 7 tbsp vegetable shortening
- 2 tbsp water
- 4 eggs beaten
- 1 cup packed brown sugar
- 3/4 tsp salt
- 1 cup butter melted
- 1 cup corn syrup
- 1 cup pecan pieces
- 1-1/2 tsp pure vanilla extract
Instructions
- To make the dough: In a food processor, combine the flour, sugar, and salt. Add the butter and cut in with five 1-second pulses. Add the shortening and cut in with five 1-second pulses. Add the water and process until the dough forms a ball. Thinly roll out the dough and place in a 9-inch pie pan. Chill.
- Preheat oven to 450° F. To make the filling: In a medium-sized bowl, mix together all of the ingredients.
- Pour the filling into the chilled pie shell and bake for 12 minutes. Reduce temperature to 350° and bake for 50 minutes more. Let cool on a wire rack.
- Place 1 piece of the pie off center on each plate. Ladle 1/4 cup prepared Crème Anglaise on the side of the pie. Dot the crème with the prepared Caramel Sauce and swirl. Garnish with the mint leaves and serve immediately.
