Southern Spoon Corn Bread

Ingredients
- 1 cup cornmeal
- 2 cups water boiling
- 1 tbsp vegetable shortening melted
- 2 eggs well beaten
- 1 tsp salt
- 2 cups milk
- 2-1/2 tsp baking powder
Instructions
- Preheat oven to 350°F.
- Scald cornmeal with water, stir thoroughly and then cool. Add melted shortening, eggs, salt, and milk. Stir in the baking powder. The batter should be quite thin.
- Pour into a greased baking dish and bake from 30 to 40 minutes. Leave in dish and serve with a spoon.
