Ingredients
  

  • 32 oz comice pear
  • 3/4 cup apple cider
  • 1/4 cup firmly packed light brown sugar
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground allspice
  • 1 pinch ground clove
  • 1 pinch ground nutmeg
  • 2 tablespoon fresh freshly squeezed lemon juice

Instructions 

  • Core the pears and cut into large chunks. Combine the pears, cider, brown sugar, spices, and lemon juice in a 4-quart heavy-bottomed saucepan. Bring to a boil over high heat, reduce heat to low, and simmer, stirring occasionally, for about 1 hour. The mixture should be thick and most of the liquid evaporated.
  • Remove from heat and puree in a food mill or food processor. Cover with plastic wrap and refrigerate.
