Stuffed Baked Potatoes with Spinach

Ingredients
- 2 whole baking potatoes
- 3 tbsp skim milk
- 1 whole egg white
- 5 oz frozen chopped spinach 1/2 pkg
- 2 tbsp low-sodium soy sauce
- 1 tbsp grated Parmesan cheese optional
Instructions
- Preheat oven to 425°F (220°C). Bake potatoes about 45 minutes or until potatoes are tender. Cut in half lengthwise, scoop out center and purée with milk and egg white in a food processor fitted with the metal blade.
- Add spinach and soy sauce.
- Replace in shells; sprinkle with cheese, if desired. Broil until browned.
