Ingredients
  

  • 2 whole baking potatoes
  • 3 tbsp skim milk
  • 1 whole egg white
  • 5 oz frozen chopped spinach 1/2 pkg
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp grated Parmesan cheese optional

Instructions 

  • Preheat oven to 425°F (220°C). Bake potatoes about 45 minutes or until potatoes are tender. Cut in half lengthwise, scoop out center and purée with milk and egg white in a food processor fitted with the metal blade.
  • Add spinach and soy sauce.
  • Replace in shells; sprinkle with cheese, if desired. Broil until browned.
