Ingredients
  

  • 6 pieces of fish fillets sweetbreads or chicken breast halves
  • Salt
  • Freshly ground white pepper
  • 1 cup flour in a plate
  • 2 eggs
  • 2 tsp oil
  • 1/8 tsp salt
  • 2-1/2 cups moderately fine crumbs from fresh crustless homemade type white bread with body; in a 9-inch pie plate

Instructions 

  • Dry the food and season lightly on both sides with salt and pepper.
  • One at a time, dip first in flour and shake off excess, then in beaten egg and shake off excess. Set in the crumbs, tossing them over the food and patting them in place.
  • Lay each piece as done on a baking sheet covered with wax paper; when all are crumbed, cover and refrigerate 20 minutes or longer, so the crumbs will set.
