To Coat Food in Bread Crumbs

Ingredients
- 6 pieces of fish fillets sweetbreads or chicken breast halves
- Salt
- Freshly ground white pepper
- 1 cup flour in a plate
- 2 eggs
- 2 tsp oil
- 1/8 tsp salt
- 2-1/2 cups moderately fine crumbs from fresh crustless homemade type white bread with body; in a 9-inch pie plate
Instructions
- Dry the food and season lightly on both sides with salt and pepper.
- One at a time, dip first in flour and shake off excess, then in beaten egg and shake off excess. Set in the crumbs, tossing them over the food and patting them in place.
- Lay each piece as done on a baking sheet covered with wax paper; when all are crumbed, cover and refrigerate 20 minutes or longer, so the crumbs will set.
