Toasted Quinoa Salad

Ingredients
- Salad Ingredients
- 2/3 c. quinoa cooked
- 1 lb. sweet potatoes peeled, cubed and roasted
- 1 T. olive oil
- 1/4 t. salt
- 1/4 t. pepper
- 2 lg. apples diced
- 8 c. baby greens
- 1/4 med. red onion sliced
- Dressing Ingredients
- 1/4 c. apple cider vinegar
- 1 t. Dijon mustard
- 1/4 c. extra virgin olive oil
- pinch of salt and pepper
Instructions
- 1. Preheat the oven to 400ºF. Spread the cooked quinoa on a baking sheet and toast for 3-5 minutes.
- 2. Whisk together the dressing ingredients. Combine the salad ingredients and toss with dressing to coat.
- 3. Serve immediately.
