Ingredients
  

  • Salad Ingredients
  • 2/3 c. quinoa cooked
  • 1 lb. sweet potatoes peeled, cubed and roasted
  • 1 T. olive oil
  • 1/4 t. salt
  • 1/4 t. pepper
  • 2 lg. apples diced
  • 8 c. baby greens
  • 1/4 med. red onion sliced
  • Dressing Ingredients
  • 1/4 c. apple cider vinegar
  • 1 t. Dijon mustard
  • 1/4 c. extra virgin olive oil
  • pinch of salt and pepper

Instructions 

  • 1. Preheat the oven to 400ºF. Spread the cooked quinoa on a baking sheet and toast for 3-5 minutes.
  • 2. Whisk together the dressing ingredients. Combine the salad ingredients and toss with dressing to coat.
  • 3. Serve immediately.
