Ingredients
  

  • 1/2 lb. veal
  • 1/2 lb. lean pork
  • 2 tbsp butter or vegetable oil
  • 3 cups water boiling
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/8 oz bay leaf 1/2 of a bay leaf
  • ¼ teaspoon whole cloves 2 whole cloves
  • 1/4 cup diced carrots
  • 3/4 cup diced celery
  • 1 cup diced potatoes
  • 12 whole onions small
  • 1 dash salt to taste
  • 1 cup brown gravy Meat Pan Gravy
  • 1 whole pie crust enough dough for one crust pie
  • 1 whole egg white

Instructions 

  • Cut the veal and pork into 1-inch pieces.
  • Stir and brown the meat lightly in the butter or vegetable oil
  • Add the boiling water, salt, paprika, bay leaf and cloves.
  • Simmer covered about 15 minutes. Remove bay leaf and cloves. Add the diced carrots, celery, potatoes and onions.
  • Bring the stew to the boiling point then reduce heat and simmer covered until meat is tender, about 30 minutes longer.
  • Season to taste
  • Make the pan Gravy
  • Preheat oven to 425°.
  • Place stew in a baking dish. Cool slightly. Top it with a vented pie crust
  • Brush with the white of egg and bake 15 to 20 minutes.
