Ingredients
- 1/2 lb. veal
- 1/2 lb. lean pork
- 2 tbsp butter or vegetable oil
- 3 cups water boiling
- 1 tsp salt
- 1/2 tsp paprika
- 1/8 oz bay leaf 1/2 of a bay leaf
- ¼ teaspoon whole cloves 2 whole cloves
- 1/4 cup diced carrots
- 3/4 cup diced celery
- 1 cup diced potatoes
- 12 whole onions small
- 1 dash salt to taste
- 1 cup brown gravy Meat Pan Gravy
- 1 whole pie crust enough dough for one crust pie
- 1 whole egg white
Instructions
- Cut the veal and pork into 1-inch pieces.
- Stir and brown the meat lightly in the butter or vegetable oil
- Add the boiling water, salt, paprika, bay leaf and cloves.
- Simmer covered about 15 minutes. Remove bay leaf and cloves. Add the diced carrots, celery, potatoes and onions.
- Bring the stew to the boiling point then reduce heat and simmer covered until meat is tender, about 30 minutes longer.
- Season to taste
- Make the pan Gravy
- Preheat oven to 425°.
- Place stew in a baking dish. Cool slightly. Top it with a vented pie crust
- Brush with the white of egg and bake 15 to 20 minutes.
