Ingredients
  

  • 3 tablespoon Olive oil salad or cooking
  • lb Pacific cod fillet
  • ½ cup Pitted black olives sliced
  • 2 cup Chopped tomatoes
  • 1 each Fresh avocado
  • 3 each Fresh scallions tops and bulb
  • ½ cup Fresh cilantro leaves chopped
  • 2 tablespoon Fresh lime juice
  • 8 each Flour tortillas

Instructions 

  • 1. Heat 1 tablespoon olive oil in large skillet over medium-high heat. Add cod and cook 4 minutes per side or until cooked through, cool. Drain well and flake fish.
  • 2. In large bowl, combine flaked fish, remaining olive oil, olives, tomato, avocado, scallion, cilantro, and lime juice. Cover and refrigerate 1 hour or overnight.
  • 3. Preheat oven to 350 degrees F. Create 2 stacks of 4 tortillas each. Wrap in foil and heat in oven 15 minutes.
  • 4. Assemble roll-ups with warm tortilla and fish mixture.
