4tspDijon mustard
1/2cupfinely chopped onions
2tbspunsalted buttercut into bits
1dash salt. to taste
1dash Black pepperfreshly ground, to taste
1-1/2cupsorange juice
1/4cupfirmly packed dark brown sugar
Instructions
Preheat oven to 375º.
Arrange the chicken skin side down in shallow baking dish and season generously with salt and pepper.
In a bowl, combine mustard, butter and onions together until a paste forms. In another bowl, combine orange juice and brown sugar until a syrup forms. Set aside until needed.
Rub the chicken with mustard and onion.
Bake chicken for 30 minutes then turn chicken skin side up for another 30 minutes. During the last 20 minutes of cooking baste chicken with syrup and cook until golden.
Chicken should be cooked to 165º. Serve immediately with additional mustard and syrup to keep the meat moist.
