Baked Chicken With Orange Juice

Ingredients
- 1 chicken about 3 pounds, quartered or 3 lbs chicken parts
- 4 tsp Dijon mustard
- 1/2 cup finely chopped onions
- 2 tbsp unsalted butter cut into bits
- 1 dash salt. to taste
- 1 dash Black pepper freshly ground, to taste
- 1-1/2 cups orange juice
- 1/4 cup firmly packed dark brown sugar
Instructions
- Preheat oven to 375º.
- Arrange the chicken skin side down in shallow baking dish and season generously with salt and pepper.
- In a bowl, combine mustard, butter and onions together until a paste forms. In another bowl, combine orange juice and brown sugar until a syrup forms. Set aside until needed.
- Rub the chicken with mustard and onion.
- Bake chicken for 30 minutes then turn chicken skin side up for another 30 minutes. During the last 20 minutes of cooking baste chicken with syrup and cook until golden.
- Chicken should be cooked to 165º. Serve immediately with additional mustard and syrup to keep the meat moist.
