1lb.beetscooked, peeled, cut into thin julienne strips
2shallotsfinely chopped
Salad Dressingvinaigrette, balsamic
Lettuce leaves of your choice
1/2small onionthinly sliced, separated into rings
1tbspchopped parsley
Instructions
In a glass dish, mix beets, shallots and Vinaigrette Dressing. Let marinate 2 hours. Line a serving dish with lettuce leaves; spoon in salad and scatter onions on top. Garnish with parsley and serve.
