Ingredients
  

  • 1 lb. beets cooked, peeled, cut into thin julienne strips
  • 2 shallots finely chopped
  • Salad Dressing vinaigrette, balsamic
  • Lettuce leaves of your choice
  • 1/2 small onion thinly sliced, separated into rings
  • 1 tbsp chopped parsley

Instructions 

  • In a glass dish, mix beets, shallots and Vinaigrette Dressing. Let marinate 2 hours. Line a serving dish with lettuce leaves; spoon in salad and scatter onions on top. Garnish with parsley and serve.
