Ingredients
- 1 lb. beets cooked, peeled, cut into thin julienne strips
- 2 shallots finely chopped
- Salad Dressing vinaigrette, balsamic
- Lettuce leaves of your choice
- 1/2 small onion thinly sliced, separated into rings
- 1 tbsp chopped parsley
Instructions
- In a glass dish, mix beets, shallots and Vinaigrette Dressing. Let marinate 2 hours. Line a serving dish with lettuce leaves; spoon in salad and scatter onions on top. Garnish with parsley and serve.
