lamb neck
cut into 1-1/2-inch cubes

minced parsley

chicken stock

or 3 carrots

sour cream
Salt and pepper to taste
Chopped parsley

Sprinkling of paprika

Instructions
In an ovenproof pan, brown the lamb cubes in oil.
When the meat is brown, add the onion and garlic and cook for 3 minutes, stirring. Add the parsley, sherry, stock, and sliced carrots. .
Cover and bake in a preheated 350-degree oven for 1 hour; add more chicken stock if necessary
When the meat is tender, skim off the fat, stir in the sour cream, and season to taste with salt and pepper.
Garnish with bits of chopped parsley or a sprinkling of paprika and serve with buttered noodles.
