Creamy Lamb Stew

Ingredients
- 2 lbs lamb neck cut into 1-1/2-inch cubes
- 2 tbsp cooking oil
- 1 large onion chopped
- 2 to 3 cloves garlic minced
- 2 tbsp minced parsley
- 1/2 cup dry sherry
- 1/2 cup chicken stock
- 2 or 3 carrots sliced
- 1 cup sour cream
- Salt and pepper to taste
- Chopped parsley optional
- Sprinkling of paprika optional
Instructions
- In an ovenproof pan, brown the lamb cubes in oil.
- When the meat is brown, add the onion and garlic and cook for 3 minutes, stirring. Add the parsley, sherry, stock, and sliced carrots. .
- Cover and bake in a preheated 350-degree oven for 1 hour; add more chicken stock if necessary
- When the meat is tender, skim off the fat, stir in the sour cream, and season to taste with salt and pepper.
- Garnish with bits of chopped parsley or a sprinkling of paprika and serve with buttered noodles.
