Preheat the oven to 400°F. Grease a large baking sheet with: cooking spray
Remove and discard the wing tips from: wings
Separate each wing into 2 pieces at the joint; trim excess fat and skin. Stir together in a large bowl: honey, mustard and vinegar
Combine on a plate: breadcrumbs, thyme and pepper
Toss the wings in the honey mixture. Add 1 at a time to the crumb mixture and turn to coat completely, shaking off the excess.
Spread the wings on the prepared baking sheet. Bake, shaking the pan twice during the cooking or turning the wings with tongs, until the wings are well browned and crispy, 20 to 30 minutes. Serve hot or at room temperature.
