Instructions
Preheat the oven to 375°F. In a large ovenproof skillet, melt the butter with 2 tablespoons of the sugar and the cinnamon over medium heat and sauté the apple slices until soft, turning them frequently.
In a large bowl, beat the egg whites until foamy. Add the salt and cream of tartar and beat until soft peaks form. Beat in 2 tablespoons of the sugar until stiff, glossy peaks form. In a medium bowl, beat the egg yolks until thick and pale in color. Beat in the remaining 4 tablespoons sugar and the Calvados or brandy. Fold in the beaten egg whites and spoon over the glazed apples.
Bake in the oven for 15 minutes, or until golden brown and set. Serve at once, with whipped cream or frozen yogurt.
