Glazed Apple Souffle Omelette

Ingredients
- 2 tbsp butter
- 8 tbsp sugar
- 1/2 tsp ground cinnamon
- 3 Granny Smith or Golden Delicious apples peeled, cored, and sliced
- 4 eggs separated
- 1/8 tsp salt
- 1/4 tsp cream of tartar
- 1 tbsp Calvados or brandy
Instructions
- Preheat the oven to 375°F. In a large ovenproof skillet, melt the butter with 2 tablespoons of the sugar and the cinnamon over medium heat and sauté the apple slices until soft, turning them frequently.
- In a large bowl, beat the egg whites until foamy. Add the salt and cream of tartar and beat until soft peaks form. Beat in 2 tablespoons of the sugar until stiff, glossy peaks form. In a medium bowl, beat the egg yolks until thick and pale in color. Beat in the remaining 4 tablespoons sugar and the Calvados or brandy. Fold in the beaten egg whites and spoon over the glazed apples.
- Bake in the oven for 15 minutes, or until golden brown and set. Serve at once, with whipped cream or frozen yogurt.
