Ingredients
  

  • 1 lb Pork tenderloin sliced into 1/4-inch thick slices
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons grapeseed oil or peanut oil divided
  • 1 lb asparagus ends trimmed and sliced into thirds
  • 2 each Garlic cloves thinly sliced
  • ¼ cup water
  • 2 cups chopped mango fresh or frozen
  • ¼ teaspoon Crushed red pepper flakes
  • 1 teaspoon grated orange zest
  • 2 tablespoons orange juice

Instructions 

  • 1. Place sliced pork in a bowl and toss with salt and pepper. Heat a wok or large skillet over high heat. Add 1 tablespoon of the oil, swirl to coat, and add pork. Cook, stirring, until pork just loses its pink color, about 2 to 3 minutes. Transfer pork to a plate.
  • 2. Add remaining 1 tablespoon. oil to wok or skillet, swirl to coat, and add asparagus, garlic, and water. Cook until asparagus is crisp-tender, about 3 minutes, stirring often.
  • 3. Return pork to wok and add mango, red pepper flakes, and orange zest; cook 1 minute, stirring often, until everything is heated through. Remove from heat, stir in orange juice, and serve.
