Mango Pork and Asparagus Stir-Fry

Ingredients
- 1 lb Pork tenderloin sliced into 1/4-inch thick slices
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons grapeseed oil or peanut oil divided
- 1 lb asparagus ends trimmed and sliced into thirds
- 2 each Garlic cloves thinly sliced
- ¼ cup water
- 2 cups chopped mango fresh or frozen
- ¼ teaspoon Crushed red pepper flakes
- 1 teaspoon grated orange zest
- 2 tablespoons orange juice
Instructions
- 1. Place sliced pork in a bowl and toss with salt and pepper. Heat a wok or large skillet over high heat. Add 1 tablespoon of the oil, swirl to coat, and add pork. Cook, stirring, until pork just loses its pink color, about 2 to 3 minutes. Transfer pork to a plate.
- 2. Add remaining 1 tablespoon. oil to wok or skillet, swirl to coat, and add asparagus, garlic, and water. Cook until asparagus is crisp-tender, about 3 minutes, stirring often.
- 3. Return pork to wok and add mango, red pepper flakes, and orange zest; cook 1 minute, stirring often, until everything is heated through. Remove from heat, stir in orange juice, and serve.
