Pasta with Grilled Chicken, White Beans & Mushrooms
This is a great recipe for using up leftover pasta! Especially if you're growing basil in your garden and have loads to spare--pile this dish with as much fresh basil as you have. It will be that much more amazing.

- 2 4 oz. boneless, skinless chicken breasts
- 1 Tbsp. olive oil
- ½ cup chopped white onion
- 1 cup sliced mushrooms
- 1 14.5 oz can no-salt-added white beans
- 2 Tbsp. chopped garlic
- ¼ cup chopped fresh basil
- 12 oz. rotelle pasta cooked
- ¼ cup Parmesan cheese
- Pepper to taste
1. Heat a grill to high. Grill or broil the chicken until it reaches a minimum internal temperature of 165ºF (5 minutes per side).
2. Transfer the chicken to a cutting board and let rest 5 minutes. Slice into strips.
3. In a large frying pan, heat the olive oil over medium heat. Add the onions and mushrooms and sauté until tender (5-10 minutes).
4. Stir in the white beans, garlic, basil, grilled chicken, and cooked pasta. If pasta is cold, heat on low until mixture is warm.
5. Top with Parmesan and pepper to serve.
