Pasta with Grilled Chicken, White Beans & Mushrooms
This is a great recipe for using up leftover pasta! Especially if you're growing basil in your garden and have loads to spare--pile this dish with as much fresh basil as you have. It will be that much more amazing.

Ingredients
- 2 4 oz. boneless, skinless chicken breasts
- 1 Tbsp. olive oil
- ½ cup chopped white onion
- 1 cup sliced mushrooms
- 1 14.5 oz can no-salt-added white beans
- 2 Tbsp. chopped garlic
- ¼ cup chopped fresh basil
- 12 oz. rotelle pasta cooked
- ¼ cup Parmesan cheese
- Pepper to taste
Instructions
- 1. Heat a grill to high. Grill or broil the chicken until it reaches a minimum internal temperature of 165ºF (5 minutes per side).
- 2. Transfer the chicken to a cutting board and let rest 5 minutes. Slice into strips.
- 3. In a large frying pan, heat the olive oil over medium heat. Add the onions and mushrooms and sauté until tender (5-10 minutes).
- 4. Stir in the white beans, garlic, basil, grilled chicken, and cooked pasta. If pasta is cold, heat on low until mixture is warm.
- 5. Top with Parmesan and pepper to serve.
