- 1 cup farro
- 1 cup peas
- ½ tsp. salt
- ¼ tsp. pepper
- 1 cup cubed watermelon
- 1 cup chopped fresh parsley
- ¼ cup shaved Pecorino Romano cheese
1. Cook farro according to package directions. In the last 2 minutes of cooking, add peas. Drain and rinse with cold water.
2. Combine farro mixture with remaining ingredients, except cheese, and toss well to combine.
3. Garnish with cheese to serve.
