Ingredients
  

  • 1 cup farro
  • 1 cup peas
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 cup cubed watermelon
  • 1 cup chopped fresh parsley
  • ¼ cup shaved Pecorino Romano cheese

Instructions 

  • 1. Cook farro according to package directions. In the last 2 minutes of cooking, add peas. Drain and rinse  with cold water.
  • 2. Combine farro mixture with remaining ingredients, except cheese, and toss well to combine.
  • 3. Garnish with cheese to serve.
