Black Bean Salad

Ingredients
- 1 large Fresh mango diced (or can of diced pineapple, drained)
- 1 cup frozen corn thawed
- 3 stalk scallion chopped
- 1 medium Red bell pepper seeded, diced
- 1 15 oz Can Black beans rinsed, drained
- ¼ cup cilantro chopped
- ½ medium lime juiced
- 1 tablespoon ground cumin
- 1 tablespoon canola oil
Instructions
- 1. Combine all ingredients in a bowl.
- Alternatives: 1/2 cup chopped onion, 2 plum tomatoes diced, 1 can pinto beans (drained), diced carrots.
