Beer, Chili, and Sage Brine for Pork

Ingredients
- 5 cups hot water
- 1/2 cup kosher salt
- 1/2 cup packed light or dark brown sugar
- 48 oz dark beer 3 bottles
- 2 tbsp molasses
- 1 tbsp Sriracha Thai hot chili sauce or to taste (optional)
- 1 tbsp cracked black peppercorns
- 2 tsp dried sage
- 1/4 cup peeled garlic cloves
- 6 lb pork loin chop 6 1-1/4 to 1-1/2 inch thick center-cut loin pork chops
Instructions
- Stir together the hot water, salt, and sugar until the salt and sugar are dissolved. Stir in the rest of the brine ingredients. Cool to at least 45°F in the refrigerator.
- Trim any excess fat from the pork. Roast for approx. 2 hours
