Ingredients
  

  • 2 whole egg yolks
  • 1 cup cooked rice rolled oats or cornmeal
  • 1-1/4 cups milk
  • 2 tbsp melted butter
  • 1-1/2 cups sifted all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 tsp double-acting baking powder
  • 2 whole egg whites

Instructions 

  • Preheat oven to 400°.
  • Beat the egg yolks, add the rice, otameal or cornmeal.
  • Mix in the milk and melted butter.
  • Sift together all-purpose flour, sugar, salt, and baking powder.
  • Beat the egg whites until stiff but not dry.
  • Combine the liquid and the dry ingredients with a few swift strokes, then fold in the egg whites. Bake for 12 to 15 minutes.
