Ingredients
- 2 whole egg yolks
- 1 cup cooked rice rolled oats or cornmeal
- 1-1/4 cups milk
- 2 tbsp melted butter
- 1-1/2 cups sifted all-purpose flour
- 1 tbsp sugar
- 1/2 tsp salt
- 2 tsp double-acting baking powder
- 2 whole egg whites
Instructions
- Preheat oven to 400°.
- Beat the egg yolks, add the rice, otameal or cornmeal.
- Mix in the milk and melted butter.
- Sift together all-purpose flour, sugar, salt, and baking powder.
- Beat the egg whites until stiff but not dry.
- Combine the liquid and the dry ingredients with a few swift strokes, then fold in the egg whites. Bake for 12 to 15 minutes.
