Pork Medallions with Pink Peppercorn Sauce

Ingredients
- 1 lb boneless pork loin sliced into 12 thin slices
- 1 cup all-purpose flour
- 1 pinch salt or desired amount for seasoning flour
- 1 pinch black pepper or desired amount for seasoning flour
- 1/4 cup clarified butter
- 1/3 cup minced shallots
- 1 tablespoon lemon juice
- 1 ½ cups brown sauce
- 1 cup dry white wine
- 2 teaspoon pink peppercorns
- ½ teaspoon salt
- ¼ teaspoon freshly ground pepper
- 2 teaspoon parsley flakes
Instructions
- Flatten the pork slices with a mallet and dredge in the seasoned flour.
- Heat the clarified butter in a large sauté pan until bubbling. Add the pork slices and shallots and sauté for 30 seconds, taking care not to let the shallots brown. Add the lemon juice, Brown Sauce, white wine, peppercorns, and salt and pepper.
- Reduce the heat and simmer over low heat for 15 minutes, gently stirring occasionally.
- Add the parsley flakes, add more white wine to adjust the consistency of the sauce if necessary, bring to a boil, and serve.
