Roast Loin of Pork

Ingredients
- 5 lb roast of pork loin end with fillet
- 1 peck sage to taste
- 1 pinch pepper to taste
- 1 pinch salt to taste
- 5 whole tart apple peeled
- 1 tablespoon sugar or needed amount for apples
- 1 cup heavy cream
- 1/4 tsp nutmeg
Instructions
- Rub the pork well with the seasonings. Place on a rack in a roasting pan and roast at 325°F, allowing about 25 minutes per pound. After 1-1/2 hours remove from the oven and pour off excess fat.
- Add the apples to the pan. Dip them in pork fat and sprinkle lightly with sugar. Return the roast to the oven and continue roasting till the meat is done - about 1 hour. Transfer the roast to a hot platter to rest 10 to 15 minutes before serving.
- Pour excess fat from the pan and add the heavy cream, a touch of salt, and the nutmeg. Let this boil down for a few minutes with the apples. Serve with the pork. Braised onions go very well with this combination.
