Ingredients
  

  • 1 lb opakapaka or red snapper boneless fillets
  • 1/4 cup fresh orange juice
  • 1 tsp grated orange rind
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp minced green onion tops
  • Salt
  • Pepper to taste
  • Orange slices for garnish optional

Instructions 

  • Combine all the ingredients except fish in a shallow baking dish large enough to fit all the fish in a single layer. Stir with fork to blend.
  • Add fish and cover with marinade. Place in refrigerator to marinate for one hour.
  • Heat oven to 400°.
  • Place the pan in the oven, uncovered, and bake 10 - 15 minutes or until fish is done. Baste fish with sauce once during baking. Be careful not to overcook.
  • To serve, place the fish with sauce on two warmed plates. You may want to add a few thin orange slices for garnish. This dish is also delicious served cold for hot-weather dining.
