Ingredients
  

  • 2 oz marrow 2 Tbsp.
  • 4 tablespoons cracker crumb
  • 1 whole egg
  • 1 teaspoon Fresh parsley finely chopped
  • ΒΌ teaspoon salt
  • 1/8 teaspoon Black pepper freshly ground
  • 1/8 teaspoon ground nutmeg

Instructions 

  • Using a wooden spoon, a blender, or a food processor, blend to a smooth paste 2 tablespoons marrow (from marrow bones), 4 tablespoons fine cracker crumbs, 1 egg, 1 teaspoon finely chopped parsley, 1/4 teaspoon salt, 1/8 teaspoon freshly ground pepper, and 1/8 teaspoon nutmeg.
  • Shape into 1/2-inch balls and chill in the refrigerator until ready to use. Drop into simmering 1 quart Beef Bouillon and cook for 5 minutes, then turn each ball with a spoon and cook for another 5 minutes. Taste one to see if it is cooked through.
