Codfish Gumbo

Ingredients
- Nonstick cooking spray
- 8 oz fresh okra trimmed and sliced thin
- 1 medium onion sliced thin
- 2 cloves garlic minced fine
- 1 large zucchini sliced thin
- 1 28- ounce can tomatoes
- 2 cups fresh or frozen corn
- 1/4 tsp freshly ground black pepper
- 1/8 tsp cayenne
- 1-1/2 lbs cod steaks
- 8 cups cooked long-grain white rice
Instructions
- Lightly coat a nonstick skillet with nonstick cooking spray.
- Add okra, and sauté over medium heat 3 minutes.
- Add onion and garlic, and sauté 5 minutes longer.
- Add zucchini and tomatoes with their juice, and cook over low heat 5 minutes.
- Add corn, black pepper, and cayenne.
- Place the cod steaks on top of the vegetable mixture, and spoon some of the mixture over them. Cook gently 10 to 12 minutes or until the fish is flaky but not mushy.
- Serve over hot rice.
