Ingredients
  

  • 2 lbs lamb neck cut into 1-1/2-inch cubes
  • 2 tbsp cooking oil
  • 1 large onion chopped
  • 2 to 3 cloves garlic minced
  • 2 tbsp minced parsley
  • 1/2 cup dry sherry
  • 1/2 cup chicken stock
  • 2 or 3 carrots sliced
  • 1 cup sour cream
  • Salt and pepper to taste
  • Chopped parsley optional
  • Sprinkling of paprika optional

Instructions 

  • In an ovenproof pan, brown the lamb cubes in oil.
  • When the meat is brown, add the onion and garlic and cook for 3 minutes, stirring. Add the parsley, sherry, stock, and sliced carrots. .
  • Cover and bake in a preheated 350-degree oven for 1 hour; add more chicken stock if necessary
  • When the meat is tender, skim off the fat, stir in the sour cream, and season to taste with salt and pepper.
  • Garnish with bits of chopped parsley or a sprinkling of paprika and serve with buttered noodles.
