Ingredients
- 1 whole small white cabbage shredded
- 4 each sweet onion chopped
- 1 each small cucumber diced
- 4 whole plum tomato quartered
- 1 tablespoon fresh greens snipped coarsely with scissors Eruca sativa
- 1 tbsp roughly chopped fresh parsley
- 1 tbsp fresh coriander leaves snipped coarsely with scissors
- 2 oz feta cheese sliced
- 1 - 2 oz black olives
- 3-1/2 fl oz best-quality olive oil
- ΒΌ cup Fresh lemon juice
- 1 pinch sea salt
- 1 pinch black pepper
Instructions
- Arrange the ingredients in a large salad bowl, starting with the shredded cabbage at the bottom and finishing with the black olives on top.
- Make the dressing: mix the olive oil, lemon juice and seasoning together. Pour the dressing over the salad just before serving.
