Ingredients
  

  • 4 cups quick-cooking lentils
  • 1 tbsp salt
  • 1 stick 1/2 cup butter
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp nutmeg
  • 2 egg yolks mixed with 2 tbsp water
  • 3 tbsp chopped parsley and more for garnish

Instructions 

  • Bring the lentils to a boil, add the salt, and simmer till they are just tender. Drain Add the rest of the ingredients and toss well. Add more parsley for garnish.
