Ingredients
- 1 10- ounce package frozen lima beans
- 1/2 lb mushrooms
- 6 scallions finely chopped
- 1 tbsp chopped parsley
- 1/2 tsp marjoram
- 3 tbsp wine vinegar
- 1/3 cup olive oil
- 1 garlic clove minced
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1/8 tsp dry mustard
- Salad greens
Instructions
- Cook the lima beans according to package directions and drain. Trim the mushrooms, wash and dry thoroughly. Cut the mushrooms into thin slices.
- Combine the beans, scallions, parsley, marjoram, vinegar, oil, garlic, salt, pepper and mustard. Allow to marinate for at least 30 minutes.
- Add the mushrooms and toss lightly. Pile the mixture atop salad greens.
