Maque Choux
Spicy, crunchy, and delicious, maque choux is a traditional corn dish of southern Louisiana that comes from the melding of Creole and Choctaw cuisine. You can serve it as a side or add a little protein like shrimp or chicken and serve it over rice to turn it into a meal.

Ingredients
- 4 cups corn
- 2 Tbsp. vegetable broth
- ½ cup chopped onion
- ½ cup chopped bell pepper
- 1 medium tomato diced
- ¼ tsp. red pepper flakes
- ¼ tsp. salt
- ¼ tsp. pepper
Instructions
- 1. In a medium saucepan, cook onion and pepper in veggie broth until tender (5 minutes). Stir in remaining ingredients.
- 2. Cover and cook over low heat until vegetables are tender (10-15 minutes).
