Peach and Red Onion Salsa

Ingredients
- ½ cup red onion fiinely chopped
- 1/2 tsp kosher salt
- 1-1/2 tbsp fresh lime juice
- 2 whole peaches peeled, pitted and cut into 1/2 inch dice (about 2 cups)
- 1 whole jalapeno pepper seeded and finely chopped
- 1 tablespoon mint chopped
- 1 tsp sugar or to taste
Instructions
- In a small bowl, toss the onion well with the salt and lime juice. Let them sit for 30 minutes to pickle slightly.
- Just before serving, stir in the remaining ingredients. Use about 1/2 cup of salsa per serving. The salsa is best made fresh, but it will keep overnight, covered, in the refrigerator.
