Ingredients
- 1 tablespoon fresh lemon juice
- 1/2 cup sugar
- 28 oz ripe pears
- 1 cup Yogurt Cheese
- 1/3 cup plus 1 tbsp skim milk
- ¼ cup pear brandy
Instructions
- In a large saucepan, combine the lemon juice, 1-1/2 tablespoons water, and 1/4 cup of sugar; keep warm over low heat. Peel, core, and coarsely chop the pears and add them to the saucepan. Bring to a boil, cover, and simmer for 15 minutes, or until the pears are very soft. Transfer the mixture to a blender or food processor and purée for 1 minute. Transfer the mixture to a mixing bowl and refrigerate until well chilled.
- Add the yogurt cheese, milk, pear brandy, and the remaining sugar to the chilled purée. Whisk until thoroughly combined.
- Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions.
