Pork in Apple Brandy Glaze

Ingredients
- 1 lb. pork tenderloin sliced 1" thick
- ¼ tsp. salt
- ⅛ tsp. pepper
- 2 Tbsp. apple jelly
- 2 Tbsp. brandy
- 1 Tbsp. chopped fresh parsley
Instructions
- 1. Sprinkle both sides of each pork slice with salt and pepper. Microwave apple jelly to soften (15 seconds). Brush tops of pork with jelly.
- 2. Coat a large skillet with nonstick pan spray and heat over medium heat. Add the pork and cook until no longer pink in the center (5 minutes per side).
- 3. Add the brandy to the skillet to deglaze, stirring the browned bits from the bottom of the skillet into the brandy. Cook until slightly thickened (2 minutes).
- 4. Serve pork with brandy sauce and parsley.
