Ingredients
  

  • 2 cups grated carrots
  • 1 cup pineapple chunks
  • 1 cup canned mandarin oranges or tangerine sectionss
  • 1/2 cup raisins
  • ½ cup flaked coconut or grated
  • 1/2 cup raw or toasted sunflower seeds
  • 4 tbsp homemade yogurt sour cream or mayonnaise

Instructions 

  • Mix all the ingredients together.
  • Serve on lettuce leaves.
  • This salad is best when it is refrigerated an hour or two before serving.
