Yellow Pepper Vinaigrette

Ingredients
- 2 each yellow bell peppers large, roasted, seeded, and peeled
- 1 ½ tablespoons shallot 1 whole shallot
- 1 tbsp champagne
- 1 tbsp champagne vinegar*
- 1 tsp Dijon mustard
- 1/4 tsp white pepper
- 1 cup vegetable oil
Instructions
- In a food processor, combine the bell peppers, shallot, champagne, vinegar, mustard, and white pepper and process for 4 minutes. While processing, slowly add the oil in a steady stream and blend well. Set aside until ready to serve.
- Champagne vinegar is available in specialty gourmet food shops.
