Ingredients
  

  • 1 ½ cup grated zucchini
  • 1 cup all-purpose flour
  • ½ cup rolled oats
  • 1 ½ teaspoon baking powder
  • 2 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup packed brown sugar
  • ¼ teaspoon Grated fresh ginger optional
  • 2 teaspoon vanilla extract
  • 1/3 cup vegetable oil
  • 1/3 cup applesauce
  • 2 whole large eggs beaten

Instructions 

  • Preheat the oven to 350°F (180°C).
  • In a large mixing bowl, combine all the ingredients. Mix well.
  • Pour batter into a greased loaf pan and bake for 45 minutes, or until a knife inserted into the center comes out dry. Cool the loaf on a rack before removing it from the pan.
