Zucchini Bread with Rolled Oats and Applesauce

Ingredients
- 1 ½ cup grated zucchini
- 1 cup all-purpose flour
- ½ cup rolled oats
- 1 ½ teaspoon baking powder
- 2 teaspoon cinnamon
- ½ teaspoon salt
- 1 cup packed brown sugar
- ¼ teaspoon Grated fresh ginger optional
- 2 teaspoon vanilla extract
- 1/3 cup vegetable oil
- 1/3 cup applesauce
- 2 whole large eggs beaten
Instructions
- Preheat the oven to 350°F (180°C).
- In a large mixing bowl, combine all the ingredients. Mix well.
- Pour batter into a greased loaf pan and bake for 45 minutes, or until a knife inserted into the center comes out dry. Cool the loaf on a rack before removing it from the pan.
