Ingredients
  

  • 4 cups spinach leaves washed
  • 4 cups red leaf lettuce washed
  • 1 tbsp finely minced fresh oregano
  • 1/4 cup coarsely chopped fresh basil
  • 1 whole red onion thinly sliced
  • 2 cups cleaned and chunked button mushrooms
  • 1 cup julienned prosciutto or Canadian bacon trimmed
  • 2 cups frozen artichoke hearts defrosted
  • 1 cup shredded smoked chicken
  • 1/4 cup julienned Havarti cheese
  • 1/2 cup crumbled feta cheese
  • ΒΌ cup balsamic vinaigrette

Instructions 

  • Place the greens and herbs in a bowl and toss well. Divide the greens among four dinner plates and top with the onion and mushrooms. Divide the bacon, artichokes, chicken, and cheeses on top. Serve with the dressing on the side.
