Ingredients
  

  • 1-1/2 cups aunt jemima reduced calorie pancake mix
  • 2 tbsp 1/2 ounce chopped pecans
  • 1 cup one 8-ounce can crushed pineapple, packed in fruit juice, undrained
  • 1/2 cup Cary's sugar free maple syrup
  • 2/3 cup water

Instructions 

  • In a large bowl, combine pancake mix and pecans.
  • In a medium bowl, combine undrained pineapple, maple syrup, and water. Add pineapple mixture to pancake mixture. Mix gently with a wire whisk just until blended.
  • Using a 1/4 cup measure as a guide, pour batter onto a large griddle or into a skillet sprayed with butter-flavored cooking spray. Gently spread with rubber spatula or spoon to form 12 (4-inch) round pancakes. Cook over medium heat until pancakes are browned on both sides.
