Amaranth Pancakes

Ingredients
- 1 cup amaranth flour
- 1-1/2 tsp baking powder
- 1 tsp cinnamon
- 1 whole egg
- 2/3 cup soy milk
- 1/3 cup raisins optional
- 2 tbsp sunflower seeds optional
Instructions
- In a medium bowl, mix together the flour, baking powder, and cinnamon. Add the egg and mix well. Add the soymilk and beat for a few seconds until smooth. Add the raisins and sunflower seeds and mix again.
- Drop the batter, 1/4 cup at a time, onto a hot, oiled skillet and cook over medium heat until bubbles appear on the surface of the pancakes and the bottoms are brown. Turn the pancakes over and cook the other side.
- Serve with fresh fruit, fruit-sweetened jams, or your choice of honey or syrup.
